Preheat the oven to 220C/428F⠀ 2. Cut the potatoes into wedges and put them into a pot⠀ 3. Boil the potatoes for 5 minutes and then drain the water⠀ 4. Add the spices into the pot, close the lid and give it a shake (it doesn’t matter if some wedges break)⠀ 5. Spread the wedges on an oven tray lined with parchment paper⠀ 6. Bake the potatoes in the oven for about 20-30 minutes⠀ 7. In meanwhile prepare the avocado dip by combining all these ingredients in a bowl⠀ 8. Mash and wish until it’s creamy⠀ 9. eating outside is tough for me because of my ocd so I’m going to try my best to tackle this, especially since recently the weather is so nice I tried to eat my dinner outside last night and I lasted 2 minutes before heading indoors. I may not have lasted as long and I’d like B U T i tried and 2 minutes is better than nothing!! So had chilli non carne for dinnerrr It has Naked Glory mince (found reduced in tescos for 69p 😍), red lentils, and kidney beans for protein and it’s packed with veggies like pepper, celery, mushrooms and of course tomatoes I made a big batch of it to freeze some portions for when i don’t feel like cooking or don’t know what to have. It’s cheaper than buying a ready meal and I know that I like it for sure ✌🏻

⁣More details below 😍🍃 Follow @veganrecipes.tv for vegan recipe videos 🌱 ⁣ Recipe by @woon.heng (yields 20-24 🥟)⁣ 🌱Dumpling wrapper ingredients - highly suggest weighing it:⁣ ~ 240g [~2cups] all-purpose flour⁣ ~ 125ml [~1/2cup] hot water⁣ 🌱Filling ingredients:⁣ ~ 16oz firm tofu, pressed⁣ ~ 4 cups [125g] fresh spinach⁣ ~ 3/4 cup [75g] cabbage, shredded⁣ ~ 1 small carrot, finely chopped⁣ ~ a handful of chopped scallions⁣ ~ seasoning - 2 teaspoons toasted sesame oil, 1 teaspoon salt & a few shakes of white pepper⁣ ⁣ ✅🥟 wrapper: Place flour in a bowl, make a well in the middle & slowly pour in the hot water. Using a pair of 🥢/spatula, stir to mix the flour until well combined. Transfer flour onto a cleaned surface & knead into a rough dough. Cover with a damp towel & rest for 5 mins. Then, knead the dough until a smooth top forms about 10-12mins. Leave the dough to rest for 20mins, covered.⁣ ✅Filling: Bring a pot of water to boil, season with 1/2 tsp salt & a drizzle of oil. Blanch veggies for 45secs & rinse with cold water. Squeeze out all the liquid & give it a rough chop. Place tofu in a cheesecloth bag, wring out all the liquid & add them to the bowl along with the rest of filling ingredients. Mix well & season with more salt, if needed. Divide mixture into 20-24 balls. ⁣ ✅Assembling: When the dough is ready, roll it into a log on a floured surface & cut into 20-24 rounds. Flatten the ball with your palm & using a roller, roll it into a disk-like thin wrapper. Place filling in the middle & pleat to seal. ✅To make the potsticker, add 3 teaspoons oil in a heated non-stick pan, place 🥟 in, slightly apart. Cook over medium heat until the bottom turns golden brown. Add 1 cup of hot water & cover with a lid. Keto Tips! ❤️❤️❤️ CHICKPEA VEGAN MEATLOAF 🚨🚨Recipe: 2-14 oz. cans or 3 1/3 cups cooked chickpeas, drained and rinsed 1 onion, diced 2 celery stalks, chopped 2 carrots, diced 2 garlic cloves, minced 2 cups panko breadcrumbs 1/2 cup unflavored soy or almond milk 3 tbsp. vegan Worcestershire sauce (Wizard or Annies or Portland brands) 2 tbsp. soy sauce or tamari 2 tbsp. olive oil 2 tbsp. ground flax seeds 2 tbsp. tomato paste 1 tsp. liquid smoke 1/4 tsp. black pepper For the Maple Glaze 1/4 cup tomato paste 2 tbsp. maple syrup 2 tbsp. apple cider vinegar 1 tbsp. soy sauce or tamari 1 tsp. paprika Instructions Preheat oven to 375°. Lightly oil a 9 inch loaf pan. Working in batches if needed, place all meatloaf ingredients into food processor bowl and pulse until chickpeas are broken up and ingredients are well mixed, stopping to scrape down sides of bowl as needed. Do not overblend. If working in batches, transfer each batch to a large mixing bowl when complete and then mix by hand. Press mixture into prepared loaf pan and bake 30 minutes. Pre heat the oven to 180C.⁠ 2. Tip the mushrooms, peppers and onions into a large roasting tin and toss with the olive oil, smoked paprika, garlic powder, sea salt and freshly ground pepper.
