Because I’ve been meal prepping for my customers all day! I had a lettuce & tomato sandwich. Def a fave! I had spring mix & arugula so arugula won! Was pretty good too. Vegan mayo, paprika, pink Himalayan salt & pepper. I grew up in these (with lettuce).💚
I try and eat low carb as much as I can, although it’s quite difficult when cauliflower are $10 each and the entire country is in lockdown. Delicious keto friendly breakfast this morning after a beautiful walk along the beach.

I’ve been making such random meals these past few weeks in quarantine. Haven’t been sharing them too much either. Life hasn’t been the best but it’s nice to be able to appreciate what life is really about.
