To make: - In a blender combine 1.5 C softened cashews (soak in boiling hot water for about 15 min and drain) with 3 cans coconut cream until smooth. . - Transfer mixture to a stove pot and bring to a boil over medium heat whisking constantly. . - Reduce heat to low and add oregano, dill, onion powder, garlic powder and S&P to taste, continuing to whisk. . - Whisk in a few Tbsp tapioca starch to thicken and continue to cook on low heat for a few more minutes. . 🌿Vegan Foccacia🌿This recipe is an adaptation from Gordan Ramsay which was already vegan (yay!). My boyfriend made this and he has edited the recipe to our taste and also added a couple of other ingredients. This was my first time eating focaccia and it is just amazing! It is not surprising that the first batch has already disappeared! Ingredients: - 500g plain flour - 1 heaped tablespoon coarse semolina - 1 tablespoon dried yeast - 50ml olive oil, plus a little extra - 15 pitted black olives, sliced - 15 cherry tomatoes - 2–3 rosemary sprigs, leaves only - 3 - 4 capers - 1/4 cup wilted spinach - Salt - Ground black pepper Instructions: 1. Mix the flour, semolina and yeast well with 1 teaspoon salt. 2. Mix 320ml warm water with the olive oil. 3. Make a well in the middle of the flour mixture and gradually add the liquid. Mix with a fork and as the dough becomes firmer, use your hands to shape it into a ball. 4. Place the dough onto a lightly floured surface and knead for about 10 minutes until smooth. The dough should also be elastic and springy. 5. Place the dough in a floured bowl and let it rise for 45 minutes or until doubled in size. 6. Preheat the oven to 200°C. 7. Place the dough in a lightly oiled baking tray (about 28 x 20cm) and sprinkle a little salt. 8. Grease your fingers with a little olive oil and prod out the dough to the edges of the tray. 9. Press the olives, capers, spinach and tomatoes into the dough such that you can still see them coming out onto the surface. 10. Season with pepper and sprinkle the rosemary leaves. 11. Drizzle the bread with another one or two tablespoom olive oil and place in the preheated oven for 30 minutes until golden and cooked through. 12. 🍄😍 Pasta, Mushrooms and a Creamy Sauce Everyone Will Love. Happy Memorial Day! 📷 by @earthofmariaa 🚨🚨Recipe: (makes 2 servings) 10oz pasta of choice 1 medium red onion, chopped 2 cloves garlic, minced 7oz mushrooms, chopped 2 tsp ginger paste 1/2 can coconut milk 1/4 cup oat milk or any other plant based milk 2 tbsp tamari 1 tsp cumin 1 tbsp gluten-free flour Cook the pasta according to packaging instructions. Meanwhile, sauté the onion, garlic and ginger paste for 3-4 minutes. Add the mushrooms and sauté for 2-3 minutes more until they start to soften. Pour in the coconut milk and oat milk together with the tamari and cumin, stirring briefly over a medium heat to warm up. Drain and rinse the pasta, transferring to the frying pan with the gluten-free flour. Stir for a minute or two until the sauce thickens before serving.

Have been doing nothing much for the past week but I managed to get my hands on some instant yeast so I could make some hotteok. I didn’t have cinnamon powder so I stupidly used five spice which resulted in a rather... unique taste 🤡 Not bad I had quite a lot of fun making this. Having instant yeast at home also meant lots of experimenting with bread stuff which I will elaborate in another post because they were a cross between a fail and passable 💆🏻‍♀️ Have a good weekend folks!!

If you haven't tried them yet, here's the sign you were looking for 😄⁠ ⁠ Cookie Dough Bites⁠ #vegan | #nutfree | #glutenfree option⁠ ⁠ Prep Time: 15 minutes⁠ ⁠ Makes 15⁠ ⁠ Ingredients⁠ - 2 cups rolled oats*⁠ - 1 can chickpeas, drained and rinsed⁠ - ½ cup @mayversfood tahini⁠ - ⅓ cup maple syrup⁠ - 3 tbsp @pureharvest coconut milk⁠ - ½ tsp vanilla extract⁠ - 80g dark chocolate (85% or higher)⁠ ⁠ Method⁠ 1. Add the oats to your food processor and blitz them into a flour consistency.⁠ 2. Place all remaining ingredients, except for the chocolate, into your food processor and continue to blitz the ingredients until mixed well. You may have to turn it off and scrape the sides down a couple of times to get everything combined.⁠ 3. Chop the dark chocolate into small chunks and stir through the cookie dough mixture.⁠ 4. With slightly damp hands, roll one tablespoon of the mixture into a ball.⁠ 5.
