Add the zucchini, tomato paste, cumin, and continue to sauté for a couple minutes more until the veggies soften. Then, pour in the coconut milk and veggie broth, stir for 1-2 minutes, then add a serving of cooked noodles of your choice, tamari, turmeric and curry powder. What a day! First of all I had quite a lot to do at work, then I needed to go grocery shopping as fridge was more than empty and as it approached 4 pm and I hadn't eaten yet I was eager to prepare some food. I've been getting my inspiration for my meals from @creativeinmykitchen 's 'The Living Well Without Lectins Cookbook' and from @drwillcole 's #ketotarian.
Before heading to the grocery store I looked up some recipes I wanted to make and put on my shopping list. Back home I decided to make the miso stir-fry with mushrooms and cabbage from Claudia's book. So far so good. I went over the ingredients but missed reading the full recipe. Even worse, a few days back I made Dr. Cole's Chinese cabbage soup, which has mostly the same ingredients (only totally different approach) and my mind just got confused. 🤪
Similar ingredients - different ways of preparing - lack of proper reading: The result was a delicious miso soup, but it was neither the one nor the other recipe. Haha... 🤣
But despite I mixed it up and improvised, it turned out really good. 😋 〰 ⠀⠀⠀⠀⠀⠀⠀⠀ Sautéed some ginger paste in sesame oil, added 4 shiitake and 8 crimini mushrooms and let cook a few minutes. Added napa cabbage, baby bok choy, miso paste, coconut aminos and covered with water. Let cook until tender. Topped with spring onions and sesame.
