I've had this tucked away in the cupboard for a while now, a gift from a foodie friend/chef. Honestly I was sceptical and a bit apprehensive in using it. Seeing as I have more time now, I decided its time. Most sites laud this ingredient as a replacement for fish in dishes. Seeing as its Thai, I thought I would do a Thai inspired curry......I cant mess it up too badly right?
Turned out fab! Coconut cream, lemon grass, thai curry paste, banana flower, diced sweet potato, garlic,chilli, ginger and lemon. Wow...just wow!
